Method

Preparing the Chimichurri Sauce

  1. 1

    Make the Chimichurri

In a bowl, mix together the chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Adjust seasoning to taste and set aside.

Cooking the Fries

  1. 2

    Prepare the Fries

Preheat the oven to 425°F (220°C). Toss the cut potatoes with olive oil, salt, and paprika. Spread them out on a baking sheet in a single layer.

  2. 3

    Bake the Fries

Bake in the preheated oven for about 25-30 minutes, flipping halfway, until golden and crispy.

Cooking the Steak

  1. 4

    Prepare the Steak

Season the flat iron steak with olive oil, salt, and black pepper on both sides.

  2. 5

    Cook the Steak

Heat a skillet over medium-high heat. Add the steak and cook for 4-5 minutes on each side for medium-rare, or until desired doneness.

  3. 6

    Rest the Steak

Remove the steak from the skillet and let it rest for 5 minutes before slicing.

Serving

  1. 7

    Plate the Dish

Slice the steak against the grain and serve it with chimichurri sauce drizzled on top. Serve alongside the crispy fries.
