Prepare the Tempura Batter

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, cornstarch, and baking powder until well combined.

Combine Both Mixtures
Pour the wet ingredients into the dry mixture and stir gently until just combined. Do not overmix; lumps are fine.
Prepare Shrimp and Vegetables

Prepare the Shrimp
Rinse the shrimp under cold water and pat dry with paper towels. Make sure they are deveined for cleaner frying.

Fry the Tempura

Heat the Oil
In a deep frying pan or pot, heat about 2 inches of oil to 350°F (175°C).

Dip and Fry
Dip the shrimp and vegetables into the tempura batter, allowing excess batter to drip off. Carefully place them in the hot oil, frying in batches to avoid overcrowding.

Cook Until Golden
Fry until the tempura is golden brown and crispy, about 2-3 minutes for shrimp and 3-4 minutes for vegetables. Remove with a slotted spoon and drain on paper towels.

In a small saucepan, combine soy sauce, mirin, dashi stock, and sugar. Heat over medium heat until warm and sugar is dissolved.

Transfer the tempura sauce to a serving bowl and serve alongside the shrimp and vegetable tempura.
