Method

Preparing the salmon

    Marinate the Salmon

    In a bowl, mix olive oil, salt, black pepper, and lemon juice. Coat the sushi-grade salmon fillets in the marinade and let them sit for 15 minutes.

    While the salmon is marinating, preheat your grill to medium-high heat.

    Grill the Salmon

    Once the grill is hot, place the marinated salmon fillets on the grill. Grill for about 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork.

Preparing the asparagus

    Trim the woody ends off the asparagus spears and rinse them under cold water.

    In a bowl, drizzle the asparagus with olive oil, salt, and pepper. Toss to coat evenly.

Making the Thai Green Curry Sauce

    In a small saucepan, combine the coconut milk, Thai green curry paste, fish sauce, brown sugar, and lime juice.

    Heat the saucepan over medium heat, stirring occasionally until the sauce is heated through and well combined, about 5 minutes.

Cooking the spaghetti

    In a large pot, bring 4 cups of salted water to a boil.

    Add gluten-free spaghetti to the boiling water and cook according to package instructions until al dente, usually around 8-10 minutes. Stir occasionally to prevent sticking.
