Preparing the Salad

Prepare the Vegetables
Wash and dry the mixed greens thoroughly. Slice the cucumber and carrot into thin julienne strips. Halve the cherry tomatoes.

Combine the Salad Ingredients
In a large salad bowl, combine the mixed greens, cucumber, cherry tomatoes, and carrot. Toss gently to mix.
Making Crispy Wontons

Fry the Wontons
Heat oil in a deep frying pan over medium heat. Cut the wonton wrappers into strips or triangles. Once the oil is hot, fry the wonton pieces in batches until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.
Preparing the Dressing

Mix the Dressing Ingredients
In a small bowl, whisk together the grated ginger, soy sauce, sesame oil, rice vinegar, and honey or agave syrup. Stir in the sesame seeds.
Assembling the Salad

Drizzle the ginger sesame dressing over the salad and toss gently to coat. Top with crispy wontons right before serving for maximum crunch.
