Method

Preparation

  1. 1

    Prepare the Flax Egg

In a small bowl, combine the flaxseed meal with water. Stir well and let it sit for about 5 minutes until it thickens.

  2. 2

    Prep the Veggies

Grate the carrot, finely chop the onion, and dice the red bell pepper. Mince the garlic and set all vegetables aside.

  3. 3

    Mash the Beans

In a large mixing bowl, drain and rinse the black beans. Using a fork or potato masher, mash them until mostly smooth but with some chunks remaining for texture.

Mixing the Patty

  1. 4

    Combine Ingredients

To the mashed black beans, add the prepared flax egg, grated carrot, diced red bell pepper, chopped onion, minced garlic, rolled oats, and all the seasonings (cumin, paprika, salt, black pepper, and chili powder).

  2. 5

    Mix Thoroughly

Using your hands or a spatula, mix all the ingredients until well combined. The mixture should be moist but hold together when formed into a patty.

Forming and Cooking

  1. 6

    Shape the Patties

Divide the mixture into 4 equal portions and shape each portion into a patty, about 1/2 inch thick.

  2. 7

    Cook the Patties

Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side or until they are golden brown and heated through.
