Soup Preparation

    Roast the Peppers

    Preheat the oven to 400°F (200°C). Cut the red bell peppers in half, remove seeds, and place them on a baking sheet. Drizzle with 1 tablespoon of olive oil and roast for 25-30 minutes until the skin is charred.

    Sauté Vegetables

    In a large pot, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.

    Blend Ingredients

    Add the roasted red peppers, tomatoes, vegetable broth, salt, black pepper, basil, and oregano to the pot. Bring to a boil, then reduce heat and let simmer for 20 minutes.

    Purée the Soup

    Use an immersion blender to purée the soup until smooth. Alternatively, transfer the mixture to a blender and blend in batches. Return the soup to the pot and adjust seasoning if necessary.

Garlic Croutons Preparation

    Prepare the Croutons

    Cut the bread into cubes. In a bowl, combine the bread cubes with 2 tablespoons of olive oil, garlic powder, and salt. Toss until evenly coated.

    Bake the Croutons

    Spread the bread cubes on a baking sheet and bake in the oven at 400°F (200°C) for about 10-12 minutes or until golden and crispy, tossing halfway through.
