Salad Preparation

Roasting Zucchini and Green Beans
Preheat the oven to 400°F (200°C). Cut the zucchini into bite-sized pieces and place them on a baking sheet with the trimmed green beans. Drizzle with olive oil, salt, and pepper. Roast in the oven for about 20-25 minutes or until tender and slightly charred.

Char the Sweet Corn
In a hot skillet, add the sweet white corn and cook for about 5-7 minutes until slightly charred. Remove from heat and set aside.

Combine Salad Ingredients
In a large bowl, combine the field greens, sliced almonds, charred corn, roasted zucchini, roasted green beans, shredded carrots, thinly sliced red onion, chopped tomatoes, and pickled cauliflower.
Vinaigrette Preparation

Make the Vinaigrette
In a small bowl, whisk together the Dijon mustard, olive oil, red wine vinegar, honey, salt, and black pepper until well combined. Adjust seasoning to taste.
Hummus Preparation

Blend the Hummus
In a food processor, combine the drained chickpeas, roasted red peppers, tahini, minced garlic, lemon juice, and olive oil. Blend until smooth, adding water as needed to reach desired consistency. Season with salt to taste.
Garlic Parmesan Crisps Preparation

Make the Crisps
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper. In a bowl, mix together the grated Parmesan cheese, garlic powder, and black pepper. Drop spoonfuls of the mixture onto the prepared baking sheet and flatten slightly. Bake for 5-7 minutes or until golden and crispy. Let cool before serving.

Assemble the Salad
