Potato Preparation
1. Wash and Slice Potatoes
Wash the Russet potatoes thoroughly under cold water to remove any dirt. Using a sharp knife or a mandoline slicer, slice the potatoes into thin, even rounds, about 1/8 inch thick.
2. Soak Potato Slices
Place the sliced potatoes in a large bowl filled with cold water. Let them soak for at least 30 minutes to remove excess starch and help them crisp up when baked.
3. Dry the Potatoes
After soaking, drain the water and pat the potato slices dry with a clean kitchen towel or paper towels to remove moisture.

4. Preheat the Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
5. Toss with Olive Oil and Seasonings
In a large bowl, combine the dried potato slices with olive oil, salt, black pepper, paprika, garlic powder, and onion powder. Toss until all the slices are evenly coated.
6. Arrange on Baking Sheet
Spread the seasoned potato slices in a single layer on the prepared baking sheet. Make sure they are not overlapping to ensure even cooking.
7. Bake the Chips
Bake in the preheated oven for 20-25 minutes, flipping the chips halfway through, until they are golden brown and crispy.
8. Add Parmesan
In the last 5 minutes of baking, sprinkle the grated Parmesan cheese over the chips to allow it to melt and form a delicious crust.
9. Cool and Serve
Once baked, remove the chips from the oven and let them cool for a few minutes. Serve warm and enjoy your Chef's Chips!
