Candied Bacon

Prepare the Candied Bacon
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Mix the Sugar and Pepper
In a bowl, mix the brown sugar and black pepper together.

Coat the Bacon
Lay the bacon slices on the prepared baking sheet in a single layer. Sprinkle the sugar and pepper mixture generously over each slice.

Bake the Bacon
Bake in the preheated oven for 15-20 minutes until crispy and caramelized. Remove from the oven and let cool.

Prepare the Cheese
Slice the cheddar cheese into thin slices or use pre-shredded cheese.

Assemble the Sandwich
Spread butter on one side of each slice of parmesan sourdough bread. On the unbuttered side, layer cheddar cheese and pieces of candied bacon, then top with another slice of bread, buttered side facing out.

Add Tomatoes and Broth
Add the canned tomatoes (with juice) and vegetable broth to the pot. Stir in salt, black pepper, and basil.

Simmer the Soup
Bring the mixture to a boil, then reduce heat and let it simmer for 15-20 minutes.

Blend the Soup
Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer to a blender and blend in batches.
