Preparation of Coffee Mixture

Brew the Coffee
Brew 240 ml of strong espresso coffee and allow it to cool. Mix in 50 g of sugar until dissolved.
Making the Filling

Prepare the Egg Mixture
In a mixing bowl, whisk together 4 egg yolks and 50 g of sugar until pale and creamy.

Combine with Mascarpone
Gently fold in 500 g of mascarpone cheese until smooth and well combined.

Whip the Cream
In a separate bowl, whip 200 ml of heavy cream until stiff peaks form.

Fold in the Cream
Carefully fold the whipped cream into the mascarpone mixture along with 1 tsp of vanilla extract. Be gentle to maintain the lightness of the mixture.
Assembling the Tiramisu

Soak the Ladyfingers
Quickly dip each ladyfinger into the cooled coffee mixture, making sure not to soak them too long to prevent them from becoming soggy.

Layer the Ingredients
In a rectangular dish, layer half of the soaked ladyfingers at the bottom. Spread half of the mascarpone filling over the ladyfingers. Repeat with another layer of soaked ladyfingers and the remaining filling.

Chill the Tiramisu
Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight to allow the flavors to meld.

Add the Toppings
Before serving, dust the top with 2 tbs of cocoa powder and sprinkle with dark chocolate shavings.
