    In a mixing bowl, crack the eggs and whisk them until the yolks and whites are fully combined. Season with salt and black pepper.

    Crumble the goat cheese into small pieces. Grate the Swiss and Pecorino cheeses. Chop the fresh herbs finely and set them aside.

    In a non-stick skillet, melt the butter over medium heat. Pour the whisked eggs into the skillet and let them cook undisturbed for about 1-2 minutes until the edges start to set.
