Whisk Eggs
In a mixing bowl, crack the eggs and whisk them until the yolks and whites are fully combined. Season with salt and black pepper.

Prepare Cheeses and Herbs
Crumble the goat cheese into small pieces. Grate the Swiss and Pecorino cheeses. Chop the fresh herbs finely and set them aside.

Cook Omelet
In a non-stick skillet, melt the butter over medium heat. Pour the whisked eggs into the skillet and let them cook undisturbed for about 1-2 minutes until the edges start to set.

Add Fillings
Sprinkle the goat cheese, Swiss cheese, Pecorino cheese, and fresh herbs over one half of the omelet. Cook for another 1-2 minutes until the cheese starts to melt.

Fold and Serve
Carefully fold the omelet in half over the cheese and herbs. Slide it onto a plate and keep warm while you prepare the crispy potatoes.
