Gnocchi

Method

Gnocchi Preparation

  1. 1

    Mix Ingredients

In a large mixing bowl, combine the ricotta cheese, all-purpose flour, egg, and salt. Mix until a soft dough forms. If the dough is too sticky, add a little more flour.

  2. 2

    Shape Gnocchi

On a floured surface, divide the dough into 4-6 pieces. Roll each piece into a long rope, about 1/2 inch thick. Cut the ropes into 1-inch pieces to form the gnocchi.

  3. 3

    Form the Gnocchi

Using a fork, gently press each piece of gnocchi to create ridges, which will help hold the sauce later.

  4. 4

    Cook the Gnocchi

Bring a large pot of salted water to a boil. Add the gnocchi in batches and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Sauce Preparation

  1. 5

    Melt Butter

In a large skillet over medium heat, melt the unsalted butter until it starts to foam.

  2. 6

    Add Black Truffle

Add the grated black truffle and sauté for about 1 minute to release its aroma.

  3. 7

    Combine Gnocchi and Sauce

Add the cooked gnocchi to the skillet. Gently toss to coat them in the butter and truffle mixture.

  4. 8

    Finish the Dish

Sprinkle the grated Pecorino Romano cheese, chopped parsley, and cracked black pepper over the gnocchi. Toss gently to combine and serve immediately.
