Chocolate Mousse Preparation

Melt the Chocolate
In a heatproof bowl, melt the chopped milk chocolate over a pot of simmering water, stirring until smooth. Remove from heat and allow to cool slightly.

Whip the Cream
In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Set aside.

Combine Mixtures
Gently fold the whipped cream into the chocolate mixture until no streaks remain.

Bloom the Gelatin
In a small bowl, sprinkle gelatin over water and let it sit for 5 minutes. Then, heat gently until dissolved and fold it into the mousse mixture.

Prepare the Raspberries
In a blender, puree the fresh raspberries until smooth. Strain through a fine sieve to remove seeds, if desired.

In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form. Set aside.

Bloom the Gelatin
In a small bowl, sprinkle gelatin over water and let it sit for 5 minutes. Then, heat gently until dissolved.

Combine Raspberry Puree
Fold the raspberry puree into the whipped cream until combined. Then gently fold in the gelatin mixture.

Layer the Ingredients
In a serving dish, dip ladyfinger biscuits in cooled coffee briefly and layer them at the bottom.

Spread a layer of chocolate mousse over the ladyfingers.

Spread a layer of raspberry mousse over the chocolate mousse.

Repeat the layers of ladyfingers, chocolate mousse, and raspberry mousse until all components are used, finishing with raspberry mousse on top.

Cover and refrigerate the tiramisu for at least 4 hours, or overnight for the best flavor.

Before serving, dust the top with cocoa powder and garnish with fresh raspberries if desired.
