Pasta Preparation

    Cook the Radiatore pasta

    Bring a large pot of salted water to a boil. Add the radiatore pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

Seafood Preparation

    Prepare seafood

    In a medium pot, bring water to a boil. Add the lobster tails and cook for about 5-6 minutes until bright red. Remove, cool slightly, and chop into bite-sized pieces. In a separate pan, sauté rock shrimp until pink and cooked through, about 3-4 minutes.

Sauce Preparation

    Make the acqua pazza sauce

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sliced fennel, and sauté until softened, about 5 minutes. Stir in the Calabrian chili paste and chicken stock, and bring to a simmer. Season with salt and black pepper to taste.

    Combine seafood and sauce

    Add the lobster meat, rock shrimp, and crab meat to the sauce. Stir gently to combine, and simmer for another 5 minutes to allow flavors to meld. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Combine and Serve

    Mix pasta with sauce

    Add the cooked radiatore pasta to the skillet with the seafood and sauce. Toss to combine well. Stir in fresh tarragon leaves.

    Plate and garnish

    Serve the pasta in bowls, topped with fried garlic and additional tarragon if desired.
