Panna Cotta Base

Bloom the Gelatin
In a small bowl, combine the gelatin powder and cold water. Let it sit for about 5-10 minutes until it softens.

Heat the Mixture
In a saucepan over medium heat, combine the heavy cream, whole milk, and granulated sugar. Stir until the sugar is completely dissolved and the mixture is hot but not boiling.

Add Vanilla and Gelatin
Remove the saucepan from heat. Stir in the vanilla extract and the bloomed gelatin until fully dissolved.

Pour into Molds
Pour the panna cotta mixture into individual serving cups or molds. Refrigerate for at least 4 hours or until set.
Berry Compote

Combine Ingredients
In a saucepan, combine the mixed berries, granulated sugar, and lemon juice.

Cook the Compote
Cook over medium heat, stirring gently until the berries release their juices and the mixture thickens slightly, about 10-15 minutes.

Cool and Serve
Remove from heat and let the compote cool before serving over the panna cotta.
