Preparation

    Clean the Mussels

    Rinse the mussels under cold water, scrubbing the shells with a brush to remove any debris. Discard any mussels that are open and do not close when tapped.

    Prepare the Vegetables

    Thinly slice the spring onions and fennel bulb. Remove the seeds from the Fresno chili and slice it thinly.

    Prepare the Ciabatta

    Slice the ciabatta loaf into thick pieces and brush each side with olive oil.

Cooking

    Sauté the Aromatics

    In a large pot over medium heat, add the olive oil. Once hot, add the sliced spring onions and fennel. Sauté for about 3-4 minutes until softened.

    Add Nduja and Chili

    Stir in the nduja and sliced Fresno chili, cooking for another 2 minutes until the nduja is melted and fragrant.

    Cook the Mussels

    Add the cleaned mussels to the pot and sprinkle with salt and black pepper. Cover the pot and cook for 5-7 minutes, shaking occasionally, until the mussels have opened. Discard any that remain closed.

    Toast the Ciabatta

    While the mussels are cooking, heat a grill pan or skillet over medium heat. Add the ciabatta slices and toast on both sides until golden brown.

    Serve

    Once the mussels are cooked, transfer them to a serving bowl. Drizzle with any remaining sauce from the pot and garnish with fresh parsley if desired. Serve hot with the toasted ciabatta on the side.
