Muffin Base Preparation

    Mix Dry Ingredients

    In a large bowl, whisk together the all-purpose flour, baking powder, and salt.

    Combine Wet Ingredients

    In another bowl, whisk together the milk, eggs, and melted unsalted butter.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

Protein Filling Preparation

    Cook Protein

    In a skillet over medium heat, cook the bacon until crispy or the sausage until fully cooked. Remove from heat and set aside.

    Prepare Cheese

    If using bacon, cut into small pieces; if using sausage, slice into rounds. Set aside with the cheese slices.

Hot Sauce Aioli Preparation

    Combine Aioli Ingredients

    In a small bowl, mix the mayonnaise, hot sauce, garlic powder, and lemon juice until smooth. Adjust hot sauce to taste.

Crispy Potatoes Preparation

    Prepare Potatoes

    Dice the potatoes into small cubes. Boil in salted water for 5 minutes, then drain.

    Crisp Potatoes

    In a skillet, heat olive oil over medium-high heat. Add the boiled potatoes, season with salt, pepper, and paprika, and sauté until golden and crispy, about 10-15 minutes.

Assembly

    Fill Muffins

    Preheat the oven to 375°F (190°C). Grease a muffin tin. Spoon the muffin batter into the tin, filling each cup halfway. Add pieces of bacon or sausage and a slice of cheese on top before adding more batter to cover them.

    Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.

    Remove from the oven and let cool slightly. Serve warm with a drizzle of hot sauce aioli and a side of crispy potatoes.
