Mascarpone Polenta Gratin

Method

Pork Shoulder

    Prepare the Pork

    Season the pork shoulder with salt and black pepper. Heat olive oil in a large Dutch oven over medium-high heat.

    Sear the Pork

    Add the pork shoulder to the pot and sear on all sides until browned, about 4-5 minutes per side. Remove the pork and set aside.

    Sauté Aromatics

    In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.

    Braise the Pork

    Return the pork to the pot, add the milk and fresh thyme. Bring to a simmer, then cover and reduce heat to low. Cook for 3 hours, or until the pork is tender.

Mascarpone Polenta Gratin

    Cook the Polenta

    In a saucepan, bring the water to a boil. Gradually whisk in the polenta and cook over low heat for 30 minutes, stirring frequently.

    Add Cheeses and Seasoning

    Once the polenta is thickened, stir in the mascarpone, Parmesan, butter, salt, and black pepper until combined.

    Prepare for Baking

    Transfer the polenta mixture to a greased baking dish. Smooth the top and sprinkle with chopped parsley.

    Bake the Gratin

    Preheat your oven to 375°F (190°C). Bake the polenta for 20-25 minutes until the top is golden and bubbly.

Grilled Peaches

    Prepare the Peaches

    Preheat the grill to medium heat. Brush the peach halves with olive oil and sprinkle with a pinch of salt.

    Grill the Peaches

    Place the peaches cut side down on the grill. Grill for 3-4 minutes until they develop grill marks and soften slightly.

    Glaze the Peaches

    Remove from the grill and drizzle with balsamic vinegar and honey. Serve warm.
