Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

In another bowl, beat the eggs, then add lemon juice, lemon zest, olive oil, vanilla extract, and milk. Whisk until smooth.

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Gradually add granulated sugar, continuing to beat until stiff peaks form and the mixture is glossy.

Spread the meringue on a baking sheet lined with parchment paper and bake at 225°F (110°C) for 1.5 hours or until dry.
