Method

Cake

  1. 1

    Preheat Oven

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

  3. 3

    Combine Wet Ingredients

In another bowl, beat the eggs, then add lemon juice, lemon zest, olive oil, vanilla extract, and milk. Whisk until smooth.

  4. 4

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

  5. 5

    Bake Cake

Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

  6. 6

    Cool Cake

Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Toasted Almond Whipped Cream

  1. 7

    Whip Cream

In a mixing bowl, add the heavy whipping cream and powdered sugar. Whip until soft peaks form.

  2. 8

    Add Almonds and Extract

Fold in the toasted almonds and almond extract gently to incorporate.

Meringue Almond Crunch

  1. 9

    Prepare Meringue

In a clean bowl, beat the egg whites until soft peaks form.

  2. 10

    Add Sugar

Gradually add granulated sugar, continuing to beat until stiff peaks form and the mixture is glossy.

  3. 11

    Fold in Almonds

Gently fold in the toasted almonds.

  4. 12

    Bake Meringue

Spread the meringue on a baking sheet lined with parchment paper and bake at 225°F (110°C) for 1.5 hours or until dry.

Huckleberry Gelato

  1. 13

    Prepare Huckleberries

In a saucepan, combine huckleberries and sugar over medium heat. Cook until the berries release their juices, about 5-7 minutes.

  2. 14

    Blend Mixture

Remove from heat and blend until smooth. Strain to remove seeds if desired.

  3. 15

    Combine with Cream and Milk

In a bowl, mix the berry puree with heavy cream, milk, and lemon juice.

  4. 16

    Chill Mixture

Chill the mixture in the refrigerator for at least 2 hours before churning.

  5. 17

    Churn Gelato

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions.

  6. 18

    Freeze Gelato

Transfer the gelato to a container and freeze for at least 4 hours before serving.
