Method
Kofta Preparation
- 1
Prepare the Kofta Mixture
In a large mixing bowl, combine the ground lamb, grated onion, minced garlic, chopped parsley, ground cumin, ground coriander, ground cinnamon, salt, and black pepper. Mix well using your hands until all ingredients are thoroughly incorporated.
- 2
Shape the Kofta
Wet your hands with water and shape the lamb mixture into elongated oval patties or skewers, about 3 inches long and 1 inch thick.
- 3
Cook the Kofta
Heat olive oil in a large skillet over medium-high heat. Once hot, add the kofta patties to the skillet, cooking for about 4-5 minutes on each side or until browned and cooked through.
Smoked Labneh Preparation
- 4
Make the Labneh
In a medium bowl, combine the plain yogurt, smoked paprika, and salt. Mix until smooth, then transfer to a cheesecloth or a fine mesh strainer lined with cheesecloth. Allow it to drain in the refrigerator for at least 2-4 hours or overnight for a thicker consistency.
