Main Ingredients

Seasonal Vegetables

Method

Preparing the Salmon

  1. 1

    Marinate Salmon

In a bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Mix well to create a marinade.

  2. 2

    Add Salmon to Marinade

Place the salmon fillets in the bowl with the marinade. Ensure the fillets are well coated. Cover and marinate in the refrigerator for at least 30 minutes.

Preparing the Vegetables

  1. 3

    Chop Vegetables

While the salmon is marinating, chop the zucchini and bell pepper into bite-sized pieces. Trim the ends of the asparagus.

  2. 4

    Season Vegetables

In a separate bowl, toss the chopped vegetables with olive oil, salt, and black pepper until evenly coated.

Grilling

  1. 5

    Preheat Grill

Preheat your grill to medium-high heat.

  2. 6

    Grill Salmon

Remove the salmon from the marinade and place it on the grill. Grill for about 6-8 minutes on each side, or until the salmon is cooked through and has nice grill marks.

  3. 7

    Grill Vegetables

Place the seasoned vegetables on the grill in a grill basket or directly on the grill. Grill for about 8-10 minutes, turning occasionally, until they are tender and slightly charred.

Serving

  1. 8

    Plate the Dish

Once the salmon and vegetables are grilled, remove them from the grill and let them rest for a couple of minutes. Plate the salmon alongside the grilled vegetables.

  2. 9

    Optional Garnish

You can garnish the dish with fresh herbs like parsley or dill and a wedge of lemon for added flavor.
