Base Gelato Preparation

Prepare the Base
In a saucepan, combine the milk, heavy cream, granulated sugar, and salt. Heat over medium heat until the mixture is warm but not boiling.

Cook the Mixture
Cook the mixture over medium-low heat, stirring constantly until it thickens enough to coat the back of a spoon. This should take about 5-7 minutes.

Cool the Base
Remove the saucepan from heat and let the mixture cool to room temperature. Once cooled, refrigerate it for at least 4 hours or overnight.

Prepare Strawberry Gelato
Once the base is chilled, divide it into three equal portions. Mix one portion with the pureed strawberries until fully combined.

In another portion, mix in the melted dark chocolate until it is fully incorporated.

In the final portion, stir in the finely chopped pistachios until evenly distributed.
Churning and Serving
