Custard Filling

French Toast

Method

Custard Filling

  1. 1

    Prepare the Custard

In a mixing bowl, whisk together the eggs and granulated sugar until well combined and slightly pale in color.

  2. 2

    Add Cream and Milk

Slowly add the heavy cream and whole milk to the egg mixture while whisking continuously to avoid cooking the eggs.

  3. 3

    Flavor the Custard

Stir in the vanilla extract and a pinch of salt, mixing until everything is well incorporated.

  4. 4

    Set Aside

Set the custard mixture aside while you prepare the French toast.

French Toast

  1. 5

    Prepare Bread

Slice the brioche bread into thick slices if not already done. Aim for about 1-inch thick slices.

  2. 6

    Soak Bread

Place the brioche slices in a shallow baking dish and pour the custard filling over them, ensuring each slice is well soaked. Allow them to sit for at least 15 minutes to absorb the custard.

  3. 7

    Heat the Pan

In a large skillet, melt the butter over medium heat. Ensure the skillet is evenly coated with butter.

  4. 8

    Cook French Toast

Add the soaked brioche slices to the skillet and sprinkle with ground cinnamon and nutmeg. Cook each side for about 3-4 minutes, or until golden brown and cooked through.

Topping

  1. 9

    Serve

Serve the French toast warm, drizzled with barrel-aged maple syrup and a dusting of powdered sugar. Optionally, add fresh berries on top for added flavor and color.
