Tropical Fruit Topping

Method

Prepare Pudding

  1. 1

    Combine Ingredients

In a mixing bowl, combine chia seeds, coconut milk, maple syrup, vanilla extract, and a pinch of salt.

  2. 2

    Mix Well

Stir the mixture well to ensure the chia seeds are evenly distributed throughout the coconut milk.

  3. 3

    Let It Sit

Let the mixture sit for 5 minutes, then stir again to prevent clumping of chia seeds.

  4. 4

    Refrigerate

Cover the bowl with plastic wrap or transfer the mixture to jars, then refrigerate for at least 4 hours or overnight until it thickens.

Prepare Toppings

  1. 5

    Prepare Fruit

While the pudding is chilling, prepare the tropical fruit by dicing the mango and pineapple, and slicing the kiwi.

  2. 6

    Toast Coconut Flakes

Optional: Lightly toast the coconut flakes in a dry skillet over medium heat until golden brown, about 2-3 minutes.

Assemble and Serve

  1. 7

    Layer Ingredients

Once the pudding has set, spoon it into serving bowls or jars. Layer the prepared tropical fruits on top of the chia pudding.

  2. 8

    Garnish

Sprinkle the toasted coconut flakes over the top as a garnish.

  3. 9

    Serve

Serve immediately or refrigerate until ready to serve. Enjoy your refreshing chia pudding!
