Method

Preparation of Base

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

  2. 2

    Combine Wet Ingredients

In a separate bowl, beat the eggs and then add the milk, melted unsalted butter, and vanilla extract. Mix until smooth.

  3. 3

    Combine Mixtures

Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Be careful not to overmix.

Cooking

  1. 4

    Preheat Oven

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.

  2. 5

    Bake the Base

Pour the batter into the prepared baking dish and spread it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted comes out clean.

  3. 6

    Cool Down

Once baked, remove the dish from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Prepare Rainy Topping

  1. 7

    Whip Cream

In a medium bowl, beat the heavy cream until stiff peaks form. Gradually add the powdered sugar while continuing to beat until fully incorporated.

  2. 8

    Melt Chocolate

In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between until smooth.

  3. 9

    Assemble Topping

Spread the whipped cream over the cooled base and drizzle the melted chocolate on top. Garnish with fresh raspberries and mint leaves.
