    Prepare the Ingredients

    Dice the char siu pork belly and Chinese sausage into small, bite-sized pieces. Mince the ginger and chop the scallions, separating the white parts from the green parts.

    Make the Sauce

    In a small bowl, combine soy sauce, sesame oil, and sugar. Stir until the sugar is dissolved.

    Cook the Pork and Sausages

    In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the char siu pork belly and Chinese sausage, cooking until browned and heated through (about 3-4 minutes).

    Add Ginger and Scallions

    Add the minced ginger and white parts of the scallions to the skillet. Stir-fry for about 1-2 minutes until fragrant.

    Fry the Rice

    Add the cooked rice to the skillet. Pour over the sauce mixture and stir well to combine. Cook for another 5-7 minutes, stirring frequently until the rice is heated through and slightly crispy.

    Prepare the Eggs

    While the rice is cooking, in a separate pan, heat a little oil over medium heat. Crack the eggs into the pan and cook until the whites are crispy, about 3-4 minutes. Season with salt and pepper.

    Add Gochujang Glaze

    Drizzle the gochujang over the fried rice and mix well. Taste and adjust seasoning if necessary.

    Serve the fried rice topped with the crispy sunny side up eggs. Sprinkle with the green parts of the scallions and furikake.
