Fries

Prepare the Potatoes
Peel the potatoes and cut them into even-sized fries (about 1/4 inch thick). Rinse the fries in cold water and then pat them dry with a kitchen towel.

Season the Fries
In a large bowl, combine the olive oil, garlic powder, paprika, cayenne pepper, cumin, salt, black pepper, and lemon zest. Add the fries to the bowl and toss until they are evenly coated with the spice mixture.

Bake the Fries
Preheat your oven to 425°F (220°C). Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.

Garnish
Once baked, remove the fries from the oven and immediately sprinkle with chopped fresh parsley.
Harissa Ketchup

Mix Ingredients
In a small bowl, combine the ketchup, harissa paste, lemon juice, and salt. Stir well until all ingredients are thoroughly mixed.

Prepare the Garlic
In a food processor, add the garlic cloves and salt. Pulse until finely minced.

Emulsify with Olive Oil
With the food processor running, slowly drizzle in the olive oil until the mixture becomes creamy and emulsified. This should take about 5-7 minutes.

Finish the Toum
Taste and adjust the salt if necessary. Transfer the toum to a bowl and refrigerate until ready to serve.
