Prepare the filling
In a skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent. Stir in shredded chicken, cumin, chili powder, salt, and black pepper. Cook for about 5 minutes until heated through.

Assemble the enchiladas
Preheat your oven to 375°F (190°C). Take a corn tortilla, fill it with about 1/4 cup of the chicken mixture, and roll it tightly. Place it seam-side down in a greased baking dish. Repeat with the remaining tortillas and filling.

Add sauce and cheese
Pour the enchilada sauce evenly over the rolled tortillas in the baking dish. Sprinkle the shredded cheese on top.

Serve
Remove from the oven, let cool for a few minutes, and serve hot with your choice of toppings like sour cream, guacamole, or fresh cilantro.
