Falafel Preparation

    Soak the Chickpeas

    Place the dried chickpeas in a bowl and cover with water. Soak overnight for at least 8 hours.

    Prepare the Mixture

    Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, parsley, cilantro, garlic, onion, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarsely ground but not pureed.

    Form the Falafel Balls

    Transfer the mixture to a bowl and add water gradually until the mixture holds together. Form small balls (about the size of a golf ball) and place them on a tray.

    Heat the Oil

    In a deep skillet or pot, heat oil over medium-high heat. Make sure there is enough oil for deep frying.

    Fry the Falafel

    Once the oil is hot, carefully drop the falafel balls into the oil in batches. Fry until they are golden brown and crispy, about 3-4 minutes on each side. Remove with a slotted spoon and drain on paper towels.

    Serve

    Serve the falafel hot with your choice of dipping sauce or in a pita.
