Marinade and Protein
Method
Preparation and Cooking
- 1
Marinate the Proteins
In a large bowl, combine minced garlic, ground cumin, ground coriander, paprika, ground cinnamon, salt, black pepper, olive oil, lemon juice, and yogurt. Mix well to form a marinade. Cut the chicken and lamb into thin strips and add them to the marinade. Ensure the proteins are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
- 2
Cook the Shawarma
Preheat a grill or skillet over medium-high heat. Remove the chicken and lamb from the marinade, letting excess marinade drip off. Grill or cook in the skillet for about 6-8 minutes per side for chicken and 8-10 minutes for lamb, or until cooked through and slightly charred. Remove from heat and let rest for a few minutes.
- 3
Slice and Serve
Slice the cooked chicken and lamb into thin strips. Serve on a platter with pita bread, fresh vegetables, and your choice of sauces like garlic sauce or tahini.
