Preparation and Cooking
1. Prepare the Marinade
In a large bowl, combine garlic, onion, parsley, cumin, paprika, salt, black pepper, olive oil, and lemon juice. Mix well.
2. Marinate Meats
Divide the marinade into two parts. Add the ground lamb and beef to one half and the cubed chicken to the other half. Mix well and let marinate in the refrigerator for at least 2 hours, ideally overnight.
3. Prepare Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat the grill to medium-high heat.
4. Assemble Kabobs
Thread the marinated lamb and beef mixture onto skewers, shaping them into long kebabs. Thread the marinated chicken pieces onto separate skewers.
5. Grill the Kabobs
Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the meats are cooked through and have nice grill marks.
6. Serve
Remove from grill and let rest for a few minutes. Serve hot with pita bread, rice, or salad.
