Kibbie Preparation

    Prepare the Bulgur

    Rinse the cracked wheat under cold water, then soak it in water for about 30 minutes. After soaking, drain excess water and set aside.

    Cook the Filling

    In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the ground meat, cinnamon, allspice, salt, and black pepper. Cook until the meat is browned. Stir in the pine nuts and chopped parsley, and cook for an additional 2-3 minutes. Remove from heat and allow to cool.

    Mix the Kibbie Dough

    In a large bowl, combine the soaked bulgur, ground meat mixture, and a little water if needed to bind. Mix thoroughly until a dough-like consistency forms.

    Shape the Kibbie

    Wet your hands and take a small amount of the mixture to form an oval shape or patties. Make a small indentation in the center to hold the filling.

    Cook the Kibbie

    Preheat your oven to 180°C (350°F). Place the shaped kibbie on a baking tray and brush with olive oil. Bake in the preheated oven for about 25-30 minutes until golden brown.
