Marinate the Chicken
In a large bowl, whisk together olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper. Cut the chicken breast into 1-inch chunks and add to the marinade. Toss to coat the chicken evenly. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat your grill or charbroiler to medium-high heat.

Assemble the Kabobs
Thread the marinated chicken chunks onto the skewers, alternating with pieces of bell peppers and onion.

Grill the Kabobs
Place the skewers on the preheated grill. Cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
