    Prepare the Eggplant

    Preheat your oven to 400°F (200°C). Cut the eggplant in half lengthwise and score the flesh with a knife in a crisscross pattern. Drizzle with olive oil, sprinkle with salt, and place cut side down on a baking sheet.

    Bake the Eggplant

    Bake in the preheated oven for 30-40 minutes, or until the flesh is soft and browned. Remove from the oven and let cool slightly.

    Scoop the Flesh

    Once cool enough to handle, scoop the flesh out of the eggplant halves and transfer it to a food processor.

    Blend the Ingredients

    Add tahini, garlic, lemon juice, olive oil, salt, and ground cumin to the food processor. Blend until smooth and creamy.

    Adjust Flavor

    Taste and adjust seasoning if necessary, adding more salt, lemon juice, or olive oil as desired.

    Garnish and Serve

    Transfer the baba ghanoush to a serving bowl, drizzle with additional olive oil, sprinkle with paprika and chopped fresh parsley. Serve with pita bread or fresh vegetables.
