Prep and Marinate Steak
Thinly slice steak across the grain into strips about 1/8"–1/4" thick. In a bowl combine soy sauce, Worcestershire sauce, olive oil, minced garlic, and 1 tsp black pepper. Add steak to the marinade and toss to coat. Let marinate at room temperature for 10–15 minutes (or refrigerate up to 2 hours).

Cook Steak
Heat a large skillet or cast-iron pan over high heat until very hot. Add a light coating of oil or nonstick spray. Add marinated steak in a single layer (work in batches if needed so meat sears rather than stews). Sear 1–2 minutes without stirring, then stir and cook another 1–2 minutes until just cooked through and browned. Remove steak to a plate and keep warm. Reserve any pan juices.

Caramelize Onions and Sauté Mushrooms
In the same hot skillet, add 1 tbsp butter and 1 tbsp vegetable oil. Add sliced onions and a pinch of salt. Cook over medium-high heat, stirring occasionally, 8–10 minutes until softened and starting to caramelize. Add sliced mushrooms and continue to cook 4–6 minutes until mushrooms release moisture and brown. Season vegetables with 1/2 tsp salt and 1/4 tsp black pepper. If using hot or sweet peppers, add them in with the mushrooms and cook 2–3 minutes until tender-crisp.

Prepare Rolls
Split hoagie rolls and lightly toast them cut-side down in a separate dry skillet or under a broiler for 1–2 minutes until lightly browned. If desired, spread about 1 tbsp mayonnaise inside each roll.

Melt Cheese and Fill
Portion the steak mixture evenly between the two rolls. Divide 2 slices of American cheese per sandwich and lay them over the hot steak so the heat melts the cheese. If the cheese needs extra melting, cover the pan with a lid for 30–60 seconds or place assembled sandwiches briefly under a broiler (watch closely) until cheese is gooey.
