Preparing the Base
Mix the Dough
In a large mixing bowl, combine the all-purpose flour, salt, and olive oil. Gradually add water while mixing until a dough forms.
Knead the Dough
Transfer the dough onto a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.
Rest the Dough
Cover the dough with a damp cloth and let it rest for at least 30 minutes.
Preparing the Filling
Sauté the Mushrooms
In a skillet over medium heat, add a tablespoon of olive oil. Once hot, add the wild mushrooms and sauté for about 5-7 minutes until they are tender. Add the minced garlic and cook for an additional 2 minutes.
Combine Filling Ingredients
In a bowl, mix the sautéed mushrooms and garlic with cream cheese, fresh herbs, and grated Parmesan cheese until well combined.
Assembling and Cooking
Roll Out the Dough
Divide the rested dough into equal portions. Roll each portion out into a thin circle on a floured surface.
Fill the Dough
Place a generous spoonful of the filling mixture in the center of each dough circle. Fold the dough over the filling and pinch the edges to seal securely.
Cook the Pedener
Heat a non-stick skillet over medium heat and add a tablespoon of olive oil. Cook each filled pedener for about 3-4 minutes on each side until golden brown.
Serve
Drizzle with extra virgin olive oil, sprinkle with fresh herbs and chili flakes, if desired. Serve warm.
