Preparation of Game Meat

Marinate the Game Meat

In a large bowl, combine the game meat with olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Mix well to ensure the meat is evenly coated. Cover and marinate in the refrigerator for at least 2 hours or overnight for best flavor.

Sear the Meat

Heat a large skillet or Dutch oven over medium-high heat. Add the marinated game meat and sear on all sides until browned (about 5-7 minutes).

Deglaze the Pan

Pour in the red wine and scrape the bottom of the pan to release any browned bits. Allow the wine to simmer for about 3-5 minutes.
