Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Melt Chocolate and Butter

In a medium saucepan, combine the unsweetened chocolate and unsalted butter. Melt over low heat, stirring constantly until smooth. Remove from heat and let it cool slightly.

  3. 3

    Mix Sugar and Eggs

In a mixing bowl, whisk together granulated sugar, eggs, and egg yolks until well combined and slightly frothy.

  4. 4

    Combine Mixtures

Slowly pour the melted chocolate mixture into the egg mixture, whisking constantly to prevent the eggs from cooking. Add the all-purpose flour and vanilla extract, stirring until just combined.

  5. 5

    Prepare Ramekins

Grease four ramekins with butter and dust with flour to prevent sticking. Tap out any excess flour.

  6. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

  7. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

Serving

  1. 8

    Cool Slightly

Remove the ramekins from the oven and let them cool for 1 minute.

  2. 9

    Invert Cakes

Run a knife around the edge of each ramekin and carefully invert each cake onto individual plates.

  3. 10

    Add Ice Cream

Top each chocolate lava cake with a scoop of vanilla ice cream.

  4. 11

    Garnish

Dust with powdered sugar and garnish with fresh mint leaves before serving.
