Crust Preparation
Preheat Oven
Preheat the oven to 350°F (175°C).
Combine Crust Ingredients
In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter.
Press into Pan
Press the mixture firmly into the bottom of a 9-inch springform pan.
Bake Crust
Bake the crust in the preheated oven for 8-10 minutes until lightly golden. Remove and let cool while preparing the filling.
Cheesecake Filling Preparation
Beat Cream Cheese
In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer.
Add Remaining Ingredients
Add granulated sugar, sour cream, and vanilla extract, and mix until well combined.
Incorporate Eggs
Add the eggs one at a time, mixing on low speed after each addition until just blended.
Fill with Cheesecake Mixture
Pour the cheesecake filling over the cooled crust in the springform pan.
Bake Cheesecake
Bake in the oven for 50-60 minutes, or until the center is set but still slightly jiggly.
Cool Cheesecake
Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
Chill Cheesecake
Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight.
Topping Preparation
Prepare Berry Topping
In a small bowl, toss the fresh mixed berries with powdered sugar.
Top Cheesecake with Berries
Before serving, evenly distribute the berry mixture over the chilled cheesecake.
