Calamari Preparation

Soak the Calamari
In a bowl, soak the cleaned and sliced calamari in buttermilk for at least 30 minutes. This will help tenderize the calamari.

Prepare the Breading
In a separate bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika until well combined.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Bread the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge the calamari pieces in the flour mixture until coated evenly.

Fry the Calamari
Carefully place the breaded calamari into the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

Add Tomatoes and Seasonings
Add the canned crushed tomatoes, dried oregano, salt, and black pepper. Stir well and let simmer for 15-20 minutes, stirring occasionally.

Finish the Sauce
Once the sauce has thickened, remove from heat and stir in the chopped fresh basil.
