Method

Preparation

  1. 1

    Trim the Tenderloin

Trim any excess fat or silver skin from the beef tenderloin using a sharp knife to ensure even cooking.

  2. 2

    Marinate (Optional)

If using a marinade, combine minced garlic, chopped rosemary, thyme, and red wine in a bowl. Place the trimmed tenderloin in a resealable bag, pour the marinade over it, seal the bag, and refrigerate for at least 1 hour, or overnight for best flavor.

Cooking

  1. 3

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 4

    Sear the Tenderloin

In a large oven-safe skillet, heat the olive oil over medium-high heat. Season the beef tenderloin generously with salt and pepper. When the oil is hot, add the tenderloin to the skillet and sear for 3-4 minutes on each side until browned.

  3. 5

    Roast in Oven

Transfer the skillet with the seared tenderloin to the preheated oven. Roast for 15-20 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare or 140°F (60°C) for medium.

  4. 6

    Rest and Slice

Remove the tenderloin from the oven, cover it loosely with aluminum foil, and let it rest for 10 minutes. After resting, slice the tenderloin against the grain into 1-inch thick slices.
