Prepare the Oven
Preheat the broiler in your oven to high.

Prepare the Salmon
Place the salmon fillet on a baking sheet lined with parchment paper. Drizzle olive oil over the salmon and season with salt and black pepper.

Prepare the Tomato-Garlic Mixture
In a bowl, combine the diced tomatoes and minced garlic (mince the garlic using a garlic press or finely chop it). Mix well.

Top the Salmon
Spread the tomato-garlic mixture evenly over the salmon fillet.

Broil the Salmon
Place the baking sheet under the broiler. Broil for about 8-10 minutes, or until the salmon is cooked through and flakes easily with a fork.

Garnish and Serve
Remove the salmon from the oven. If desired, sprinkle with fresh parsley before serving.
