Making Cannoli

Prepare the Pastry Shells
In a mixing bowl, combine flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in egg yolk, wine (or vinegar), and water until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.

Roll and Cut Dough
On a floured surface, roll out the dough to about 1/8 inch thickness. Cut into circles about 4 inches in diameter.

Form Cannoli Shells
Wrap each circle around a metal cannoli tube, sealing the edges with a little water. Repeat with remaining dough.

Fry the Shells
Heat oil in a deep fryer or large pot to 375°F (190°C). Fry the shells until golden brown, about 2-3 minutes. Remove and let cool on paper towels.

Prepare the Filling
In a bowl, mix ricotta cheese, powdered sugar, vanilla extract, chocolate chips, and cinnamon until smooth.

Fill the Cannoli
Once the shells are cool, carefully remove them from the tubes. Use a pastry bag to fill each shell with the ricotta filling.

Serve
Dust the filled cannoli with powdered sugar before serving.
