Making the Cannoli

1. Prepare the Dough

In a large mixing bowl, combine flour, sugar, salt, and cocoa powder. Mix well. In a separate bowl, whisk together egg yolks, white wine (or vinegar), and melted butter. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.

2. Knead and Rest

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Wrap the dough in plastic wrap and let it rest for at least 1 hour at room temperature.

3. Roll and Cut

After resting, divide the dough into quarters. Roll out each piece as thin as possible (about 1/8 inch thick). Cut into circles about 4 inches in diameter.

4. Shape the Shells

Wrap each dough circle around a cannoli tube, sealing the ends with a little water. Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels.

5. Prepare the Filling

While the shells cool, prepare the filling by mixing ricotta cheese, powdered sugar, vanilla extract, and chocolate chips in a bowl until well combined.

6. Fill the Cannoli

Once the shells are cool, carefully remove them from the tubes. Fill a piping bag with the ricotta mixture and pipe it into each shell from both ends.

7. Serve
