Method

Cooking Pasta

  1. 1

    Boil the Pasta

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Sautéing Vegetables

  1. 2

    Prepare the Vegetables

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

  2. 3

    Cook the Vegetables

Add the sliced bell peppers, zucchini, carrot, and broccoli florets to the skillet. Sauté for 5-7 minutes, or until they are tender but still crisp.

  3. 4

    Add Cherry Tomatoes

Stir in the cherry tomatoes and cook for an additional 2 minutes until they soften slightly.

Combining Ingredients

  1. 5

    Mix Pasta with Vegetables

Add the cooked pasta to the skillet with the sautéed vegetables. Toss everything together, adding reserved pasta water a little at a time to create a light sauce.

  2. 6

    Season and Serve

Season with black pepper and mix well. Remove from heat and sprinkle with grated Parmesan cheese before serving.
