Crust Preparation

    Preheat the oven

    Preheat your oven to 325°F (160°C).

    Mix crust ingredients

    In a medium bowl, combine the graham cracker crumbs, 1 tablespoon of sugar, and melted butter. Mix until well combined and the texture resembles wet sand.

    Press into pan

    Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Make sure to pack it tightly.

    Bake the crust

    Bake the crust in the preheated oven for 10 minutes. Remove from oven and let it cool while preparing the filling.

Cheesecake Filling Preparation

    Prepare cream cheese

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

    Add sugar and sour cream

    Gradually add 1 cup of granulated sugar and continue to beat until well combined. Then add the sour cream and vanilla extract, mixing until smooth.

    Incorporate eggs

    Add the eggs one at a time, mixing on low speed until just combined. Be careful not to overmix. Finally, add the flour and mix until just blended.

    Pour filling into crust

    Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.

    Bake the cheesecake

    Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly. The cheesecake will continue to firm up as it cools.

    Cool and chill

    Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. This helps prevent cracking. Once cooled, refrigerate for at least 4 hours, preferably overnight.

    Remove the sides of the springform pan and slice the cheesecake. Serve plain or with your favorite toppings.
