Method

Prepare Enchiladas

  1. 1

    Preheat Oven

Preheat your oven to 375°F (190°C).

  2. 2

    Soften Tortillas

Heat the corn tortillas in a skillet over medium heat for about 30 seconds on each side until softened.

  3. 3

    Fill Tortillas

Place a small amount of shredded chicken (about 1/4 cup) in the center of each tortilla, roll them up tightly, and place seam-side down in a greased baking dish.

  4. 4

    Add Sauce and Cheese

Pour green enchilada sauce over the rolled tortillas and sprinkle shredded jack cheese on top.

  5. 5

    Bake

Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.

Prepare Beans

  1. 6

    Heat Beans

In a saucepan over medium heat, combine the canned black beans, ground cumin, and salt. Heat until warmed through, about 5-7 minutes.

Prepare Salad

  1. 7

    Prepare Salad Ingredients

Chop romaine lettuce, halve cherry tomatoes, and thinly slice cucumber.

  2. 8

    Mix Salad

In a bowl, combine the chopped lettuce, tomatoes, and cucumber.

  3. 9

    Dress Salad

Drizzle olive oil and lime juice over the salad and season with salt to taste. Toss to combine.
