Prepare the Proteins

In a bowl, combine the shrimp, carne asada, chicken breast, and chorizo. Drizzle with 1 tablespoon of olive oil, lime juice, salt, black pepper, cumin, and paprika. Mix well and marinate for at least 30 minutes.

Prepare the Beans and Vegetables

Rinse the charro beans and set them aside. Chop the bell peppers and onion into bite-sized pieces. Mince the garlic cloves.

Grilling

Grill the Vegetables

Heat a grill pan over medium-high heat. Add 1 tablespoon of olive oil and sauté the bell peppers, onion, and garlic until they are charred and tender, about 5-7 minutes. Remove from the pan and set aside.

Grill the Proteins

In the same grill pan, cook the marinated carne asada for about 5-7 minutes on each side until cooked through. Remove and let rest. Next, grill the chicken breast for 6-8 minutes on each side until fully cooked. Finally, grill the shrimp until pink and opaque, about 2-3 minutes per side. Cook the chorizo in the pan until crispy, about 5 minutes. Slice the carne asada and chicken into strips.

Combine and Serve

On a serving platter, layer the grilled charro beans as a base. Top with grilled bell peppers, followed by the shrimp, carne asada, chicken, and crispy chorizo. Serve hot with additional lime wedges on the side.
