Method
Marinating the Steak

Prepare the Marinade
In a bowl, whisk together olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper.

Marinate the Steak
Place the flank or skirt steak in a resealable plastic bag and pour the marinade over it. Seal the bag and refrigerate for at least 30 minutes or up to 2 hours.
Cooking the Vegetables

Sauté the Vegetables
In a skillet over medium heat, add a tablespoon of olive oil. Once hot, add the sliced onions and bell peppers. Sauté for about 5-7 minutes until they are soft and slightly caramelized. Season with salt and pepper to taste.
Grilling the Steak

Preheat the Grill
Preheat your grill to high heat. If using a grill pan, heat it over medium-high heat on the stove.

Grill the Steak
Remove the steak from the marinade and discard the marinade. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Use a meat thermometer for accuracy, aiming for 130°F (54°C) for medium-rare.

Slice the rested steak against the grain into thin strips.

Serve
Warm the flour tortillas in a dry skillet or microwave. Assemble fajitas by placing the sliced steak, sautéed onions and peppers, and garnishing with chopped cilantro, sour cream, and salsa.
