Preparation

  1. 1

    Prep the Seafood

Rinse the scallops under cold water and pat them dry with a paper towel. Cut the crab imitation into bite-sized pieces.

  2. 2

    Chop the Vegetables

Julienne the bell peppers and onion. Dice the tomato.

Cooking

  1. 3

    Heat the Pan

In a large skillet or grill pan, heat the olive oil over medium-high heat.

  2. 4

    Cook the Vegetables

Add the chopped bell peppers and onion to the skillet. Sauté for about 5-7 minutes until they are tender and slightly caramelized.

  3. 5

    Add the Seafood

Add the scallops and crab imitation to the pan along with the cumin, chili powder, salt, and black pepper. Cook for about 3-5 minutes until the scallops are opaque and cooked through.

  4. 6

    Incorporate the Sauce

Pour the ranchero sauce over the seafood and vegetables, stirring to combine. Let it simmer for an additional 2-3 minutes until heated through.

Serving

  1. 7

    Warm the Tortillas

In a separate pan, warm the flour tortillas over low heat for about 1-2 minutes on each side until pliable.

  2. 8

    Assemble the Fajitas

Serve the seafood mixture in the warm tortillas. Optionally top with additional diced tomatoes or fresh cilantro.
